An authentic cauliflower and potato curry.
Ingredients
- 1 small cauliflower head
- 3-4 Chopped Potatoes

1 Crushed garlic cube ( 3 - 4 medium garlic cloves)

1 Sliced green chili (optional)
- ½ Cup sliced red onion
- ½ Cup sliced red peppers
- ¼ Tsp fenugreek seeds
- ¼ Tsp nigella seeds
- ½ Tsp cumin powder
- ¼ Tsp coriander powder
- 1 Bay leaf
- ½ Tsp turmeric powder
- 1 Tbsp cooking oil
- Salt as per taste
- Pinch of freshly ground pepper
- Chopped spring onion ( ½ inch size), ½ cup
Directions
- Cut the cauliflower and set aside
- Heat the oil in a large skillet on medium heat. Temper it with bay leaf, nigella seeds, fenugreek seeds, for about a minute.
- Add the onion and saute for about a minute.
- Add garlic and cook for about a minute.
- Add turmeric, and salt (about ½ tsp) and mix well.
- Next add the cumin and coriander powder and cook for another minute. Add a splash of water if it sticks to the bottom.
Add spring onion and sauté for 1 - 2 minutes adding splashes of water to avoid sticking.
- Add the cauliflower florets and coat them well with the spice mix. Add a splash of water and saute for 1 - 2 minutes on low - medium flame.
Cover it and set the heat to low and let it cook for 2 - 3 minutes.
Then uncover and stir it well, adding splashes of water if needed. Cover again and let it cook. Repeat the process for 10 - 15 minutes until the cauliflower florets are fork tender.
- Adjust the salt and sprinkle ground black pepper. Mix well.
- Serve warm.
