Spiced Chickpeas & Sweet Potato Stew

A hearty stew, perfect for cold winter nights.

Ingredients
- 300g Brown or Green Chickpeas
- 1/4 Cup of chopped tomatoes or canned.
- 2 Cups of cubed sweet potatoes
- 2 Heaping cups of chopped leafy greens (kale is used in this recipe)
- 3 - 4 Cups of water or veggie broth.
- 1 Tbsp oil
- 2 Bay leaves
- 2 Cloves
- 1 Cardamom pod
- One, 1 inch cinnamon stick
- 1 Tsp cumin seeds
- ½ - 1 Tsp turmeric powder
- 1 Tbsp cumin powder
- 1 Tsp coriander powder

½ Tsp crushed ginger
- 2 Shallots or 1 medium onion sliced

2 - 3 Garlic cloves roughly chopped
- 2 Tbsp Chopped coriander.
- Salt as per taste.
- Pinch of black pepper.
- Pinch of cayenne pepper or chili flakes. (for the heat, optional)
Directions
In a high sided sauté pan, heat the oil over medium heat, add bay leaves, cinnamon stick, cloves, cardamom and let the aroma come out.
- Add cumin seeds and sizzle until they become fragrant.
- Add turmeric powder and allow it to bloom for 30 secs.
- Add sliced shallots/onions and fry for a minute. Then add garlic and fry for another minute or two until the raw smell goes away.
- Add cumin, coriander powder. Mix all the spices well.
- Add ginger powder. Cook for a minute. Add a splash of water if the spice mix becomes dry.
Add the sweet potatoes and kale. Add salt and a pinch of pepper. And cook for a minute. Add 2 cups of broth.
Mix well and then cover it. Cook it on medium heat until the sweet potatoes are almost tender ( for about 12 - 15 minutes).
Uncover and add the tomatoes.
Stir well. Add the chickpeas and the rest of the broth or water. Mix well and cover for another 5 - 7 minutes. Until the potatoes are tender and greens are wilted. If you don’t like your greens wilted, Add them after you add the chickpeas.
Adjust the salt and pepper to your taste. If you like, adjust the thickness of the stew by adding water. Add a pinch of cayenne if you like to get some heat.
- Serve it hot with rice/flatbreads/ toasted bread or enjoy it as it is with fresh cilantro on top.
